Lotus Pear & Amaranth Almond Crumble

Serves: 6-8

Ingredients:

  • 2 tbsp Lotus Organic Rapadura Sugar
  • 1 tsp Lotus Baking Powder
  • 1/2 cup Lotus Organic Amaranth Flakes Rolled
  • 1/2 cup Lotus Organic Millet Flour
  • 50g coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup flaked almonds
  • 3-4 large pears
  • 1 cup frozen raspberries
  • 2 tbsp iced water

Method:

Peel, core and slice the pears and arrange in a baking dish. Mix vanilla extract with raspberries and sprinkle over pears. Combine remaining ingredients to make crumble topping. Bake for 20-30 minutes or until crumble is golden and cooked through.
