Lotus Pear & Amaranth Almond Crumble
Serves: 6-8
Ingredients:
- 2 tbsp Lotus Organic Rapadura Sugar
- 1 tsp Lotus Baking Powder
- 1/2 cup Lotus Organic Amaranth Flakes Rolled
- 1/2 cup Lotus Organic Millet Flour
- 50g coconut oil
- 1 tsp vanilla extract
- 1/2 cup flaked almonds
- 3-4 large pears
- 1 cup frozen raspberries
- 2 tbsp iced water
Method:
Peel, core and slice the pears and arrange in a baking dish. Mix vanilla extract with raspberries and sprinkle over pears. Combine remaining ingredients to make crumble topping. Bake for 20-30 minutes or until crumble is golden and cooked through.
